Our busy season is upon us.... therefore I haven't been blogging as I should be. My garden is growing, growing, growing! I can't wait for everything to be baring veggies for me to eat and can! One of my favorite parts of summer. :D
Today is MacKenzie's last day of school for the year. YAY! We have been on overload with her Girl Scout activities and end of school fun days and of course dance! Her recital is this weekend and then we are done for the summer. Girl Scouts has brought her so much joy this year. She has been able to do some things she wouldn't normally get to do. With her selling 646 boxes of cookies she has earned many points/money that can be used to pay for camp this summer. We are still trying to decide which one she'd like to attend.
Ayden and Baylee are growing like weeds and running my ragged and talking my ears off! They HATE to be in the house! I love the fact that they are so close to each other and love each other so much. It makes my heart happy! I just hope that they stay this way as they grow up.
Kent is busy, busy. Work is busy and farming is busy as well. There has been rain lately so we have been blessed with getting more time as a family. He has needed the rest as well. I think he takes on so much during the summer and gets worn out. He would never admit that though!
I have become great friends with our Girl Scout Troop leader. She is a wonderful mother of three beautiful girls. Our kids like to play together and we love talking! We both would love to bring in extra income while still being able to be at home with our children so we can lessen our husbands work loads. We have taken on the adventure of opening a daycare/preschool. We are currently in the process of renting a place a half block from my house so we can go in and clean and paint and get things ready to open up in August. We will only be open from August to May that way we can spend the summers with our kids and of course so I can help Kent with his farming.
Now that I have caught everyone up on what we have going on I'd like to share a favorite recipe of mine!
Bourbon Pork Chops
4 boneless thick cut pork chops
1 cup flour
2 eggs
1/4 tsp salt
1/4 tsp pepper
2 tbsp
1/2 tsp ground thyme or two sprigs fresh
8 heaping spoonfuls of Apricot preserves
1/2 cup Bourbon
1 cup orange juice
Beat eggs with salt and pepper. Dip your pork chops in the egg mixture then into the flour. Meanwhile in a hot pan melt your butter and place your pork chops as you bread them. Brown pork chops on the first side and flip. As the second side is browning sprinkle your pork chops with thyme. Place two heaping spoonfuls of apricot preserves on each pork chop. Turn your heat to medium and then pour Bourbon then orange juice over the pork chops. Cover and simmer for 30 to 45 minutes. These pork chops will be tender and yummy!!! :D I serve these with scalloped potatoes and green bean casserole and fresh bread! My family loves it!
